The last few weeks have been so full of work travel for both Jeff & I that I haven't had much time for cooking up a new Mangia Monday recipe. And that really got me thinking - I need to infuse some new dishes into our weekly dinner routine & find some inspiration for new recipes.
Thanks to Pinterest & all of the great foodie blogs I follow, I'm finding tons of new dishes to try! So I decided to share some new menu ideas with y'all on the weeks I don't have a new recipe to blog. And I even stumbled upon a Meal Plan Monday link-up for even more recipes & dinner ideas! Every week I try to bake something sweet for desserts.
This week's treat: Easy Oatmeal Carmelitas!
Notes: *I always add 1 cup freshly grated parmesan cheese to the Creamy Chicken & Rice Casserole.
**I substitute broccoli florets for chopped celery in the Orange Chicken Stir-Fry
Whew! That's a lot of cooking for the week. But neither Jeff & I are traveling and we're still plugging along with our commitment not to dine out during this Lenten season. But there will undoubtedly be some yummy leftovers to eat up for lunches & over the weekend.

Great recipes. That is ambitious. We don't eat out that much with the kids, but I usually plan one or two nights for leftovers so I end up cooking about four meals a week. :)
oh yum, your meal plan sounds amazing!! i just made our meal plan last night - this week, we're doing spicy tomato + chicken posole, lightened-up chicken enchiladas, homemade pizza, + turkey tacos. friday will likely be leftovers. =) have a great week, ally!
YUM! Sounds like you have some fabulous meals planned. I feel so much better when I have a general idea of what I'm cooking for the week rather than winging it.

Well dang girl! That all looks soooo good. My mouth is watering! Wish I lived closer so I could crash your tasty dinner ;)
The bourbon glazed salmon looks deelish! I made brandy mustard chicken last week and it was quite tasty. ;-)
These are some great recipes and I will have to give them a try.
Will also have to check out that blog as well.
My menu tips are if I have alot to do in the afternoon or going to be away from home I try a crockpot recipe or a frezzer meal I have put together and put up for crazy days but if Im going to be home most of the day I cook from oven or stovetop.
Then there are day where I am at home and dont feel like cooking then I go for something really easy like hotdogs, tacos, casseroles. LOL

I have GOT to start doing better with meal planning. Life is so much easier when I commit to it each week. And I tend to waste less!!!
