Can y'all believe 2011 is almost over? The Holidays are almost here! I mean, Thanksgiving is just a little over a week away. That just blows my mind. I had a great soup recipe planned for today. I even had the post written, in fact. And then I realized the best food Holiday of the year is approaching and soup just wouldn't do it justice. We gotta talk about the good stuff, not soup. So this Monday & next I'm gonna introduce y'all to my 2 favorite, ultimate must-have sinful dishes of Thanksgiving, starting with my Mom's sweet potato pie.
I could eat this pie for breakfast, everyday. It's good cold or warm right out of the oven. It doesn't need a lot of fancy garnishes or homemade whip cream, although it doesn't hurt. It's simply front & center, stand alone Thanksgiving goodness. Trust me on this, I wouldn't steer you wrong.
Ingredients
- 2 cups cooked, mashed sweet potatoes
- 1 cup sugar
- 1/2 tsp salt
- 1 cup evaporated milk
- 2 eggs
- 1/2 cup butter, melted
- 1 tsp vanilla extract
- 1/2 tsp lemon extract
- chopped pecans
Crust: We now use Ina Garten's crust recipe because it's perfection
- 12 TB very cold unsalted butter
- 3 cups AP flour
- 1 tsp kosher salt
- 1 TB sugar
- 1/3 cup very cold Crisco
- 6-8 TB ice water (about a 1/2 cup)
Directions
- Peel & cube sweet potatoes. Place in large stockpot & cover with water. Boil until cooked thoroughly. Drain well & mash.
- While the potatoes are cooling, make your pie crust.
- Blend all pie ingredients together, beating well until creamy & smooth.
- Bake in 400 degree oven until done, about 30 minutes.
- Top with some chopped pecans
Note: You can use an unbaked pastry for a 9-inch pie if you don't want to make homemade pie crust. Also, you can easily double this recipe for 2 pies if you like.
Clearly I'm biased, but I happen to think my Mom's pie is truly the best. It's just not Thanksgiving without it! I have so many great memories wrapped into this dish. But this isn't even my most favorite turkey day delight. You'll have to come back next Monday for that one. It'll be worth the wait, I promise you that! I had never had sweet potato pie until I met Mr. Banker. It was his grandma's specialty...but sadly she never used a recipe and no one could ever get her to write an approximation down. I'll have to try to make this one sometime and ask him how close it is! Thanks!
This sounds heavenly! I have to try it this weekend and if it turns out half as great as you're describing, I'm going to make it for Thanksgiving dinner. That'll throw everyone I know for a loop, haha. Can't wait to see what tops even this next week!
When I was really young, my grandmother made this sticky rice thingy. I have no idea what it's called, and whenever I try to describe it to my mother, she looks at me like I'm an idiot. I'm afraid that recipe is lost forever, since no one in my family, except my grandma, can cook a halfway decent meal.

A definite dish to put on my Thanksgiving day wish list—as Maybell would say, "hush yo' mouth"—my hubby would absolutely die for a yummy SPP and this one is worth a spin and a half, Ally.
I tend to stick with simple stuff since my dinner is so big (items like gooey bars, apple crisps, and sometimes a cheesecake), but this is too good to pass up.

My dad always made the most juiciest and flavorful turkey by wrapping bacon slices all around it, and he only removed the slices at the very last minute so that the turkey could have a nice, golden-brown color. His smoky bacon flavored turkey's seriously the best.
