Y'all are gonna feel like i seriously jipped you on a decent recipe today, like i just slapped something minuscule in the Blogger Queue because i'm on vacation. Not true. But once you see how ridiculously easy this is, you'll get that impression. I don't blame you, i'd think the same. Here's the thing, some of my most favorite, delicious, go-to recipes are soooo freakin' simple. And this one is no exception. My Mom has been making this summer sweet treat for years and i'm making it as well this week for my In-laws at the beach. It's the perfect summery dessert that's a cinch to whip up for company and also make it into your family menu rotation.
Ingredients:
- 1 stick butter
- 1 1/2 cups graham cracker crumbs
- 1/4 cup + 2 TB sugar
- 3 sliced bananas
- 1 can sweetened condensed milk
- 1/2 cup lemon juice
- 1 lg can crushed pineapple, drained
- 1 (10 oz) carton Cool Whip
- 1 can Angel Flake coconut
- 1 small jar maraschino cherries
- 1/2 cup chopped pecans
Directions:
- For the crust: Melt the butter. In a medium bowl, add melted butter with graham cracker crumbs and 1/4 cup sugar. Stir together until moist then pat it evenly to form a crust in a rectangular pyrex/casserole dish.
- Blend together the sweetened condensed milk, lemon juice, & 2 TB sugar with a mixer.
- Add the following in layers:
a. 3 sliced bananas
b. pour above blend of sweetened milk, lemon juice & sugar over the bananas
c. spread the layer of pineapple
d. spread the Cool Whip
e. layer the coconut, then evenly space the cherries, and sprinkle the pecans

Southern Belle Simple brilliantly calls these types of concoctions

In my house we call dishes like that, "things that make mommy happy" because this mommy doesn't have hours to slave away in a kitchen. Quick, easy, and delicious is what this recipe should be called.

Don't you love that about the beach? You spend months working out, calorie counting, and stressing over looking good in a swim suit only to stuff your faces when you get here.... Guilty!
