Mangia Mondays: Feta Avocado Salsa

In honor of my hubby competing in his first Off-road Triathlon yesterday (which he rocked with a 3:52:37 time btw) i of course wanted to pamper him afterwards, which included a meal of his fave dishes. I knew before he even requested it that he'd want my Feta Avocado Salsa that i make a lot in the summer. I've probably made this twice weekly the last month since our tomatoes started ripening in the garden. Plus its a great way to use up the over-abundance of herbs we've got growing right now. Jeff & i LOVE this recipe, so i thought i'd share it with y'all as well.



Ingredients:
  • 4 plum tomatoes, chopped
  • 2 TB finely chopped red onion
  • 2 garlic cloves, minced
  • 8 oz  Feta Cheese, crumbled
  • 1 TB chopped fresh parsley
  • 1 TB chopped fresh cilantro
  • 3 TB red wine vinegar
  • 2 TB good EVOO
  • 1/2 TB fresh oregano
  • 1/2 tsp kosher salt
  • 2 fresh avocados, chopped
  • Serve with either Stacy's Pita Chips and/or Colored Tortilla Chips
Directions:
  1. Blend together the first 10 ingredients.
  2. Gently stir in the avocados right before serving. 
  3. The salsa is best when allowed to refrigerate overnight so the flavors can marry.
  4. Serve with pita chips or colored tortilla chips.
I'm telling you, this is the best salsa you'll ever eat and so easy to make. Try it and let me know what you think. Happy Monday and Mangia! Mangia! y'all :)

First, congrats to the hubby on finishing a Triathlon—wow! That's very impressive.

Second, that salsa looks delish! I love tomatoes, especially when they are in season and salsa is something that I indulge in multiple times a week—from chips to chicken—so making one that looks as appetizing as this would be a treat for me.

Thanks Kim! I'm impressed too - i would've passed out by mile 5 on the bike haha.

You are gonna love this salsa. And truly you can use any kind of tomato you've got - you don't have to use plum tomatoes.

oh my, this loves heavenly! i'm so tempted to make this, as we grow a bunch of the ingredients in our yard (tomatoes, parsley, oregano). there's only one problem - i'm married to the one person in the world who doesn't like avocados/guacamole. sad, but true. i'm hoping to convert him one day soon. until then, i'll make it for parties! by the way, congrats to your husband on the triathalon!

Amy: Girl, i feel your pain. My husband hates peaches. Mind boggling.

For an easy, fresh pico try it without the avocados. I'm sure it would be just as heavenly.

I make a very similar salad and I agree..two thumbs up!!!
